BANANA & ALMOND MUFFINS

There are two versions of this recipe, one that is gluten-free and one that uses an ancient grain called Spelt that does contain some gluten.
Depending on your health requirements, if you are strictly gluten-free then go with the first version that uses gluten-free rice flour.
2 ripe bananas, mashed
¼ cup (60ml) maple syrup
¼ cup (60ml) almond butter
¼ cup (30g) Bob’s Red Mill Gluten-Free Rice flour
1 tsp. baking powder
¼ tsp. baking soda
1 serving Daily Fiber
¼ cup (30g) walnuts
2 ripe bananas, mashed
¼ cup (60ml) maple syrup
¼ cup (60ml) almond butter
½ cup (55g) Spelt flour
1 tsp. baking powder
¼ tsp. baking soda
1 serving Daily Fiber
¼ cup (30g) walnuts
Here's what you need to do:
Heat the oven to 355°F (180°C) and line a muffin tray with paper muffin cups.
Mash the bananas with a fork and combine with the maple syrup and almond butter. Fold in the flour, baking powder, Daily Fiber, and baking soda and mix well.
For the Gluten-Free version, make sure to reduce the flour amount slightly to account for the higher density of the rice flour.
Divide the batter between the 6 muffin cups. Top each one with the walnuts.
Bake for about 18-20 minutes in the middle of the oven, or until a toothpick comes out clean.
Remove the muffins from the oven and cool completely before serving.
