Lentil Soup

You will need:

  • 1 tbsp. olive oil
  • 2 onions, finely chopped
  • 2 celery ribs, finely chopped
  • 2 carrots, finely chopped
  • 2 garlic cloves, crushed
  • 1-2 tsp. curry powder
  • 5 ounces (150g) red lentils
  • 1-quart vegetable stock
  • 1 cup tomato or vegetable juice
  • Salt and pepper




Directions:


1. Heat oil in a large pan over medium heat.

2. Add onions, celery, and carrots. Cook forĀ five minutes or until the onions are soft and translucent, stirring frequently.


3. Add garlic and curry powder and cook for another minute.


4. Add lentils, stock, and tomato juice.


5. Bring to a boil, then lower heat, cover, and simmer for 25 minutes or until the vegetables are tender. Season to taste with salt and pepper.
