Tahini Roasted Cauliflower
You will need:
1 head of cauliflower (leaves removed)
1 cup tahini
Zest Juice of 1 lemon
¼ teaspoon of cumin
½ teaspoon garlic powder
Salt and pepper to taste
Preheat oven to 400°F.
Wash cauliflower and trim off all leaves, and cut bottom level.
In a small bowl, mix tahini, lemon zest, and juice, cumin, garlic powder, salt and pepper to taste.
Line a baking sheet with parchment paper or foil. Drizzle olive oil or grapeseed oil on the pan so the cauliflower will not stick.
Massage tahini mixture over the cauliflower. Any unused marinade can be used as a salad dressing or dip later.
Roast in the oven for 40 minutes or until just fork-tender.
